This chicken sushi roll recipe is a delightful combination of sweet, sticky teriyaki chicken, crunchy cucumber, and perfectly seasoned rice. It is topped with soft avocado and adds a unique texture and flavor. You can serve these sushi rolls as bite-sized canapes or as sophisticated finger food.

- Chicken breast
- Sesame oil

Instructions
Step 1: Prepare the Chicken
Before you begin, prepare or purchase teriyaki sauce, 120g (4 oz) of sushi rice, and approximately 10 thin cucumber batons.
First, add one teaspoon of sesame and two teaspoons of olive oil to a frying pan, and turn on the heat. Get a piece of chicken breast, and slice lengthwise in two or three pieces. You will need two pieces of about 3 to 4cm wide for one roll. Then, sprinkle a pinch of sea salt on one side. Place the salted sides on a pan, and sprinkle the other side with another pinch of salt.
Make sure that the chicken breast is cooked through on one side, then flip it over and cook the other side. This will make the chicken taste best. The cooking process also kills harmful bacteria. However, don’t cook the chicken too long as it will dry out the meat and make it tough.
You can poke a skewer into the thickest part of the chicken to verify that it is fully cooked. Watch out for any juice that drips out. It should be clear, and does not appear pink. A cooking thermometer, however, is the best way to verify it. Stick it in the middle of the thickest section. The chicken meat will be fully cooked when it reaches 75°C (167°F).
After the chicken has been cooked through, pour the thick teriyaki sauce on top. Allow it to simmer for a while to infuse the chicken breasts with the teriyaki flavors. Then, take out the teriyaki chicken and place it on a plate to cool.
Step 2: Preparing the Chicken Sushi Roll
This will be an inside out (urumaki) roll.
To prevent rice sticking to the mat’s rivets, place your bamboo rolling mat in a zip-lock food bag. Then, place a half sheet of nori on the mat, with the rough side facing upwards. Also, moisten your hands using water and rice vinegar, so it would be easier to handle the rice.
Next, spread 120g of sushi rice on the sheet of nori, reaching all corners. The rice should be handled gently to ensure that it stays fluffy and light. Then, flip the sheet in order to have the rice facing the rolling mat.
Step 3: Adding the Filling
Get two pieces of the teriyaki chicken breasts, and put them in the middle of the nori sheet. Place a few cucumber batons on top of the chicken. However, do not add too many as it will make it difficult to roll the roll.
Then, drizzle some teriyaki sauce on top of the chicken and cucumber. You can adjust the amount of sauce to suit your taste, but it is important not to use too much or the roll may become too wet.
Step 4: Rolling the Sushi
Grab the end of the bamboo mat closest to you, and fold it over the filling at the center of the roll. As you roll, compress everything together while applying pressure on the bamboo mat with your hands.
Once the rice is rolled up, release the pressure slightly, take the mat off the roll, and push the roll forward a bit. Then, compress the roll again while gently squeezing. Continue this process for two to three more times, until the rice is tightly compressed and the rice is compact.
Step 5: Slicing the Avocado
Cut a half-peeled avocado into thin slices of about 1mm. Only use the tip of the knife to quickly cut through the avocado. You will get a cleaner cut if you only use the tip of the knife, as avocados are less likely to stick to your knife.
Place the avocado on a cutting board. Then, to make the avocado look uniform, flatten the slices a little using your hands, and trim the sides (the pointed edges) with a knife. You should be able, if you have flattened them correctly, to do this in one motion.
Step 6: Adding the Avocado to the Roll
Place your sushi roll back onto the cutting board. Slide the flat side of the knife underneath the avocado slices to scoop them up. Then, place the slices on top of the sushi roll.
Step 7: Cutting the Roll
Cover your sushi roll lightly with a sheet of cling film. Then, put the bamboo rolling mat, this time without the plastic bag cover, on top, and use gentle pressure to further shape the roll. Remove the mat, but the cling film can be left in place.
Drag your knife across a dampened towel to moisten it. This will prevent the rice from sticking on the blade. Then, cut the roll in half, and arrange both halves side-by-side. Slice each half into four pieces. If you prefer really neat pieces, you can also cut both ends of each half, and eat them right away to get a taste of your rolls. Also, don’t forget to keep moistening your knife between cuts.
After the cutting is complete, remove the cling film gently.
Step 8: Serving the Sushi
Finally, arrange the sushi pieces on a plate neatly, and add a spoonful of pickled ginger to the side. Then, drizzle a little teriyaki sauce over the sushi pieces, and sprinkle toasted sesame seed over the sushi roll to add crunch.

- 1 cup shredded chicken (canned or rotisserie)

- 2 sheets seaweed, cut in half
- 1 ½ cups cooked rice (short grain preferred)
- Rice seasoning
- 1 Persian cucumber, sliced (or regular cucumbers)
- 1 large avocado, sliced
Instructions
Step 1:
First, cut the cucumber into thin slices, slice the avocado, cook the rice, and cut the seaweed in halves. Then, mix the shredded chicken with some sriracha and mayo. All the ingredients should be at your fingertips so you can easily reach them. It is guaranteed that if you don’t have all the ingredients ready, it will take you a lot of time preparing and rolling the sushi. Once you have all the ingredients prepared, all that is left to do is grab them and roll your sushi. You can use canned chicken, or any leftover Rotisserie chicken. It is also okay to use leftover rice from the previous night, just make sure to reheat it.
Step 2:
Put a half-sheet of seaweed on a cutting board, then spread a layer of warm rice over the seaweed. It is required to completely cover the seaweed, so you need approximately 1/4 to 1/3 cups of rice. Short grain rice is recommended because it’s stickier. However, you can also use long grain rice if you don’t have short grain. Just make sure the rice is not dry.
Step 3:
Before you begin spreading an even layer of rice, make sure your fingers are wet. This helps to prevent rice sticking to your fingers while you are working with it.
Then, sprinkle rice seasoning on top of the rice. You can use as much or as little seasoning as you like. It is entirely up to your preference. Rice seasoning is something I love so I used a lot of it. Traditionally, toasted black sesame seeds are used. However, if you only have rice seasoning, you can use that.
Step 4:
Flip the rice and seaweed over so that the rice side is facing downwards.
Step 5:
Arrange a few spoonful (approximately 3 tablespoons) of the spicy chicken in a thin layer close the bottom of the seaweed. A wall should be built along the bottom. Then, add slices of avocado and cucumber to the spicy chicken.
Step 6:
After all ingredients have been placed, hold the bottom edge of seaweed rice, and roll the seaweed and all the ingredients until you reach the opposite end. The rice should be on the outside now.
It’s fine if your rice looks messy. Don’t worry you didn’t do anything wrong!
Step 7:
Place your bamboo sushi rolling mat in a Ziploc bag. You might have thought it is required to use the sushi mat to roll the sushi, but the mat is only necessary at the end to make the rolls smoother. You also need to have the sushi mat inside the bag to keep the rice from sticking to the sushi mat itself. The rice does not stick as much on the Ziploc, so it makes cleaning much easier.
Step 8:
Put the Ziploc sushi mat on the sushi roll. Then, press against the bamboo sushi mat where you placed the roll gently. This will help to press the rice against the sushi, and it smoothes any areas where it might be falling off.
Step 9:
Remove the sushi mat from the roll carefully.
Step 10:
Use a sharp knife to cut the roll in half, just slice the knife backwards and forwards. Do not press down on the sushi roll as this will cause it to tear apart. Pressing down also squishes the sushi roll. Therefore, slicing it back and forth will keep everything intact.
Step 11:
You can place the halves side-by-side and cut them into two or three more slices. You can cut it in 3 slices to make 8 pieces. However, for thicker pieces, you can make 2 slices.
Step 12:
Continue making these rolls until all of your ingredients are used.
Step 13:
Serve these spicy chicken rolls with pickled ginger, soy sauce, and/or wasabi.
