This stew is one of the most flavorful stews ever! It’s packed with flavor, yet so simple to prepare. This is the perfect meal for anyone who loves seafood and some spice.

Ingredients

For The Marinade

  • 1 clove garlic
  • 1 lime
  • 1 tsp chili flakes
  • 500 g king prawns

For The Sauce

  • 1 onion
  • 2 cloves garlic
  • 1 fresh green chili
  • 1 green pepper
  • 1 red pepper
  • 1 tbsp coconut oil
  • 1 tsp chili powder
  • 1 tsp cayenne
  • 2 tsp paprika
  • 1 tsp tomato puree
  • 4 plum tomatoes
  • 400 ml coconut milk
  • 1 bunch fresh coriander

To Finish

  • 1 big bowl cooked white rice
  • 2 spring onions
  • 1 lime

Instructions

Step 1 – Marinate the Prawns

For the marinade, peel and mince the garlic, and place it in a mixing bowl. Then, zest the lime into the bowl and squeeze the juice. Add the chili flakes and the prawns. Marinate for at least an hour.

Step 2 – Fry the Vegetables

Next, peel and dice the onion. For the sauce, peel and mince the garlic. Dice the chili and remove the seeds of the peppers, and thinly slice these deseeded peppers. All of the prepared vegetables should be placed in a large saucepan over a medium heat. Fry for 5 minutes. Add the cayenne, chili powder, and paprika, then turn the heat to low and continue to fry for 10 more minutes. Fry until the vegetables start to caramelize.

Step 3 – Cook the Stew

The next step is to dice the tomatoes, but keep the seeds. Cook the tomato puree for a few minutes more before adding the fresh tomatoes and coconut milk. Let it simmer for 20 minutes. Stir in the prawns, and continue to simmer for 5 more minutes. Serve with white rice.
