How to Make Poor Man’s Stew

Ingredients:

  • 1 lb. ground beef browned and drained
  • 1.5 lbs potatoes, diced large

  • 1 garlic clove minced (I had this on hand already)
  • 6 oz. can tomato paste
  • 2 cups water
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. onion powder
  • 1 tsp. dried oregano

Directions:

  • First, add the beef in a large skillet on the stove-top, and brown it. Drain the fat.
  • Add the beef, potatoes, onions, carrots, and garlic to the slow cooker.
  • Whisk the tomato paste with water, salt, pepper, onion powder, and oregano in a small bowl. Then, pour this mixture into the slow cooker. Stir.

How Long Do I Cook Poor Man’s Stew?

  • Cover the slow cooker with a lid, and cook on low for about 7 to 8 hours, or until the potatoes become tender.

  3. Put the lid on, and cook on LOW for 7 hours. Do not open the lid during this time.
  4. Then, serve with buttered sandwich bread or rolls, and enjoy!
