Oven-Roasted Asparagus and Carrots

This roasted asparagus and carrots recipe is a classic side dish that works with meat, seafood, and vegetables. The best part is, there's very little hands-on time.

Ingredients
  

  • 1 bunch asparagus trimmed
  • 3 pcs large carrots chopped into long, thin sections equal to asparagus size
  • 1 tbsp olive oil extra virgin
  • pinch salt to taste
  • Freshly Ground black pepper
  • ½ cup parmesan or goat's cheese
  • 2 tsp lemon zest

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper. Arrange the asparagus stalks and carrot pieces in an even layer.
  3. Drizzle with olive oil and toss until lightly coated. Season with salt and pepper. Roast for about 20 to 25 minutes, until tender and slightly browned.
  4. Serve the dish warm with sprinkles of the cheese of choice and lemon zest to taste.
