We all want to look younger, slimmer and fitter. And we all have days we just want to hop on a bike and ride down the village road under the trees, or run on the beach with the dog, or at least hit the local gym after work. In such days we naturally crave for something packed with vitamins and freshness. This is one of my recipes for such days – crunchy French beans and cherry tomatoes with lemon dressing.
You can take in a lunchbox to the office, or serve it at dinner with just about any fish or meat. And because it’s done in no time, be able to go to the gym, too.
Preparation time: 10-15 minutes
300g french beans, fresh or frozen
300g cherry tomatoes, halved
1 small onion, very finely chopped or grated
Juice of one lemon
3 tbsp extra virgin olive oil
Some sea salt
2 tsp dried oregano
If using fresh green beans, make sure to remove of the ends. Then chop into 2-3 cm pieces and boil in salted water (or even better in homemade vegetable stock) for about 10 minutes. If you are going to use frozen French beans, you save yourself the ends cutting and you need just 5 minutes of boiling.
In the meantime make the salad dressing: combine the grated onion with lemon juice, olive oil, oregano, and little salt, and mix well until they blend well.
Take the French beans of the heat, drain and wash with cold water just for few seconds to stop the cooking process. Place it in a salad bowl, add the halved cherry tomatoes and mix well with the salad dressing. That’s it!
Oh, and something else: If you’re not taking the salad to the office, try it with a little garlic – just press a clove or two into the dressing – it will make it even richer.
