Orange and grapefruit lettuce salad

Preparation time: 15 minutes


For the salad:

1 orange, medium to large size, peeled and segmented 1 grapefruit, medium size, peeled and segmented One head lettuce, washed and torn in bite size pieces

1 cup of walnut halves

For the dressing:

50 ml extra virgin olive oil Juice of one lemon zest of one lemon Half a bunch of fresh flat leaf parsley

Half a bunch of fresh dill


For the salad:

Wash the lettuce few times, using cold water and spin in a salad spinner or pat dry with paper towels. Tear the lettuce into bite-size pieces and place in a bowl.

For the parsley dressing:

Place the parsley leaves in a small heatproof bowl and pour over some boiling water. Leave it like this for 2-3 minutes, then drain off and cool under the cold tap. Drain again and place your parsley in a blender. Add the dill, lemon juice and zest, and a good pinch of sea salt. Top with olive oil and then blend to make it resemble a purée, but not too much.

Divide the lettuce leaves among four salad plates. Top the lettuce with an equal amount of orange and grapefruit segments, walnuts and drizzle with the salad dressing. Serve immediately.
