Salads play a special role in Bulgarians’ diet – no matter whether at home or in a restaurant, Bulgarians will always start their lunch or dinner with a salad. Bulgarians just love salads.
Without a doubt, Bulgaria’s most famous salad is exactly Shopska salad. It is named after the Shoppi, the natives of Sofia region. This is also the first salad you are likely to taste if you are visiting Bulgaria. Shopska salad is served in almost every Bulgarian restaurant but you can easily prepare it at home, too.
Preparation time: 10 minutes
4 tomatoes medium size tomatoes
1 large cucumber
2 roasted peppers or fresh green peppers
2 spoonfuls chopped parsley
2 spoonfuls chopped or sliced onion
250 g Sirene cheese (Greek feta will do as well)
salt, vinegar, sunflower oil to taste
Cut the tomatoes, cucumbers and peppers in small cubes. Mix well with the parsley, onion, salt, vinegar and oil. Serve in individual plates and top up with grated Sirene cheese.
Goes well with traditional Bulgarian rakia – a grape or plum brandy, drunk as an aperitif.
